Summary & menu guide of my week on the plate!
TWO heartwarming soups, pesto beans, focaccia sanga, zucchini and three cheese galette, egg bagel, lunch snack plate, caramel fennel and more!
CIAO CIAOOOOOO!
As promised to you all, I would share some of the recipes and foods that I ate during my documented week. The whole menu and throw together meals were shared with our paid subscribers, however I promised a little summary of the yummiest things for everyone to see, read and make!
This biggest take away from this food journal that I can offer is this: if you have the BASICS under your belt in the form of good produce, great cheeses and pantry staples like vinegars, mustards and oils - it allows you the capacity to really make a wide variety of delicious things that are easy, healthy and fast. Even after my 7 days was over, I still have over half of my produce left for a second week of cooking and I will only need to grab some protein fillers like another whole chicken or some organic steak.
A few people asked what my staple grocery order is, which are the things that I buy every week that create a range of viable options at either lunch or dinner. Obviously some of these things come in and out of season but essentially you will always find in my basket:
Dairy: butter, milk, ricotta, natural yogurt, pecorino or parmesan
Pantry: sourdough bread, pasta, GF pasta, rice, white beans, tinned tomatoes,
Meats/animal: whole chicken, salami, eggs
Produce: shallots, lettuce, potatoes, ginger, white onion, carrot, celery, zucchini, cucumbers, lemon, beans, garlic, spinach, herbs
This combo is in general what I will always purchase when I head for my grocery shop and whilst it doesn’t seem like a huge variety, you can do A LOT with the above ingredients alongside a few things that are in season.
I hope you en-JOY the recipes below and if I was to make a special mention to the hero things to try and make it would be: the Zucchini galette, the pesto beans, focaccia salami sanga and the Italian penicillin.
With love, chaos & rigatoni,
PM xx

Zucchini & three cheese galette
This is the dough recipe I use here, minus the vodka, have found its not needed. So I use the dough recipe but then make my own filling with the zucchinis instead of the ‘BLT’ filling in recipe
