An unforgettable zucchini & saffron pasta

I’m typing this quickly whilst at the dog park knowing that the recipe will be lost into the vortex of my chaotic mind unless I share it before I go to sleep tonight and my brain readjusts for a fresh day tomorrow of LOTS OF THINGS GOING ON ALWAYS.
I made this pasta for lunch just hours ago based on a previous memory of consuming it in Sardinia a few years back. I needed a quick lunch between meetings and found myself with all the ingredients needed, specifically some very good and real deal SAFFRON.
There is a classic recipe that exists in the Italian world for this dish, but I have removed some things (like the bacon) to fit my pantry and tummy needs, so my version of this recipe is below. It’s ridiculous how little is needed and how SIMPLE this recipe is in comparison to how DEEPLY delicious it is. I just know you’ll love it, okay!? It’s one to keep in the back pocket of pasta goodness.
